It is the end of the year and there is lots to do...and lots of visitors. So here is a quick recipe that can be muffins or bread, and makes a great breakfast!
This is a very easy recipe because it is an enhanced box mix! Yes it is good on it's own, but THIS version is even yummier and healthier (shhh)!
Why do I change the box mix?
I like playing with box mixes and cookbook recipes because I like to add more nutrition to things that I know picky eaters like...you get what I'm saying folks?! LOL
I had a friend whose kiddos loved corn, so she would mix in green beans and corn, carrots and corn, peas and corn - and they would eat it. Try it with mac and cheese! Similarly, these days you can sneak in riced veggies or veggie noodles to regular dishes your family likes and amp up the healthy factor.
My ultimate "trick" is brownies. Once upon a time I cooked for someone who ate NO veggies ever. So unbeknownst to that person I bought the Level 1 baby food pureed veggies and substituted green beans or peas or carrots for some of the oil or water in the brownie mix. It worked great and there is NO flavor change. You can also do this with spaghetti sauce.
What kind of healthy side effects are packed into each delicious bite?
Pumpkin adds vitamins, A, C, B2, potassium (and more), beta-carotene and other antioxidants, and dietery fiber.
Cranberries are also a great source of antioxidants and Vitamins C, E. and manganese to name a few.
Walnuts also add antioxidants - especially polyphenols, calorie-dense proteins, healthy Omega-3 fats, and Vitamin E.
So the addition of these 3 ingredients makes this breakfast muffin/bread much more nutritious and will keep you feeling full and energized longer than if it was just cinnamon and sugar.
